Dum-Dhuaan🔥Mutton: Ingredients & Recipe Below:-
- Dry roast 2 tbsp poppy seeds, 12-15 cashew nuts, 1 tbsp each of stone flower, coriander seeds, 1 tsp each of cumin seeds, black peppercorns, 1 star anise, 1 mace, 1 black & 2 green cardamom, 4 cloves, 2 inch cinnamon, 6 Kashmiri red chillies and 1 bay leaf on low flame for 2.5 minutes. To these add in 200 grams curd, handful of coriander stems and 6-7 crispy fried brown onions blending together into a smooth paste adding a bit of water.
- Marinate 800 grams mutton in a Kadhai with 5-6 tbsp oil, the paste prepared above, 3/4th tbsp each of salt, red chilli powder, coriander powder, half tbsp each of fennel powder, dry ginger powder, cumin powder and 2 tbsp ginger-garlic paste. Let it sit for half an hour.
- Put the Kadhai on high flame for 2.5 minutes then add in a cup of water and seal off the Kadhai completely cooking the mutton on dum for 4 minutes on high then 1 hour on low flame. Keep shaking the Kadhai from time to time so the pieces don't stick to the bottom. Garnish with roasted crushed kasoori methi and chopped coriander leaves and lastly give it Dhungaar for 5 minutes by placing a burning coal in the centre and adding a bit of ghee on top.
