Hi everyone!
Here's another what I eat in a day video, with a lot's of colorful gluten free & vegan food.
I hope you like it 💚

Homemade gluten free vegan bread:
200 g buckwheat flour
200 g gluten-free rolled oats
2 1/2 tbsp psyllium powder
2 tsp bicarbonate soda
1 1/2 tbsp apple cider vinegar
1/4 cup flax seeds
1/4 cup sesame seeds
2 1/2 cup water
1 tsp salt

Instruction:
1. Set the oven to 225 C.
2. Mix all the dry ingredients in a bowl, except from the psyllium powder.
3. Mix the psyllium powder with water and apple cider vinegar and stir around well.
4. Let the liquid rest for about 10 minutes until the consistency thickens.
5. Pour the psyllium mixture into the dry ingredients and mix well.
6. Leave to rest for another 10 minutes.
7. Place baking paper in a bread form and pour over the dough/batter.
8. Bake in the middle of the oven for about 55 minutes at 225 C.
9. Let the bread cool completely on a baking rack before slicing it up and topping it with your favorites!

Baked potatoes/Chickpea mash 3 servings:
3 baked potatoes
230 g/1 can chickpeas (cooked, rinsed)
2-3 tbsp capers
2 tsp dijon mustard
1 tbsp lemon juice
1/2 tsp garlic powder
Black pepper
Salt
1 tbsp white smooth tahini
1-2 tbsp almond milk
Dill
Red onion

Serve with green kale and red cabbage with salt, olive oil, apple cider vinegar and black pepper, and also some cucumber and tomatoes.

Tofu bowl 2 servings:
Buckwheat noodles
200 g firm tofu
1 tbsp tamari
1/2 tsp garlic powder
Chili flakes
Water to simmer in

Coriander dressing 3 servings:
200 g silken tofu
1/2 tsp garlic powder
Chiliflakes
1 tbsp lemon juice
1/2-1 tsp sesame oil
1 tsp tamari
Coriander
1 tsp salt
4 tbsp almond milk
Optional: nutritional yeast
