I had a look at the mini games that took advantage of the Joy-con 2 Mouse controls and thought to myself,
"I wonder if I can use 2 controllers at the same time"
which I did and noticed S rank challenges whenever you go to team of 2 players only option instead of the competitve 1v1v1v1 / 2v2. From there, I've managed to get an S rank on every mouse mini game challenge. Some were easy such as Ice and Easy but others were brutal including both Bob-omb related minigames and Bowser Filter.
