I’m back with another festive favorite - Besan Ladoo, but this time with a healthy twist! 🎉 These ladoos are super easy to make, completely free from ghee and refined sugar, and loaded with healthy fats, fibre, and protein. If you love besan ladoos as much as I do, you’re going to want to try this version. it’s guilt-free and absolutely delicious!

Healthy Besan Ladoo (No Ghee, No Refined Sugar)

Ingredients
1 cup raw almonds
½ cup walnuts
¼ cup desiccated coconut
¾ cup gram flour (besan)
3 - 4 cardamom pods
½ cup soft dates, roughly chopped (I'm using Medjool)
Finely chopped almonds (for garnish)
Raisins (optional, for mixing in)

Instructions
Roast the nuts & coconut👇
Heat a pan on low to medium flame.
Add 1 cup almonds and roast for 5 minutes, stirring constantly.
Add ½ cup walnuts and roast for another 3 minutes.
Add ¼ cup desiccated coconut and roast for 1 more minute.
Turn off the heat and set aside to cool.

Roast the gram flour (besan)👇
In the same pan, add ¾ cup gram flour.
Roast on low heat for about 15 minutes, stirring continuously for even roasting and to avoid burning.
Once it turns golden and releases a nutty aroma, turn off the heat and let it cool completely.

Blending nuts & besan👇
Transfer the cooled almonds, walnuts, coconut, and 3-4 cardamom pods to a food processor or high-powered blender.
Blend until smooth and creamy, scraping down the sides occasionally. This may take several minutes.
Add ½ cup chopped tightly-packed soft dates to the nut butter.
Blend until the mixture is well combined.
Add the cooled roasted besan to the mixture.
Blend again until everything comes together into a smooth ladoo mixture.

Shape the ladoos👇
Transfer the mixture to a bowl.
Roll into ladoos .
Garnish with finely chopped almonds, or mix in almonds and raisins while shaping if you like.

Notes & Variations👇
You can mix in other flours like whole wheat, ragi, or oats along with besan.
Swap almonds and walnuts with cashews, peanuts, or your favorite nuts.

Room temperature: 4-5 days (in a cool, dry place, stored in an airtight container).
Refrigerated: Up to 2 weeks (airtight container, keeps them firm and fresh).
