豉汁排骨炒麪

材料:
排骨12兩
麪餅4個
三色椒適量
洋蔥1個
豆豉20粒
蒜蓉1茶匙
辣椒仔1隻

處理:
1. 大火煲滾1鑊水,放麪餅煮至軟身,擎乾水。
2. 排骨,切細粒,清水沖洗乾淨,擎乾水,廚紙索乾。
3. 排骨調味:
a. 生粉1湯匙
b. 糖半湯匙
c. 生抽半湯匙
d. 蠔油半湯匙
e. 蒜蓉半湯匙
f. 豆豉(已沖洗乾淨)
撈勻。
4. 三色椒,洗淨,1開4,除去籽,切細塊。
5. 洋蔥,洗淨,1開4,去皮,再1開4,用菜刀壓散。
6. 辣椒,去椗,打直1開2,去籽,切細粒。

烹調:
1. 放排骨入煲內,加入清水800毫升,大火煮滾,轉中慢火,炆10~12分鐘。
2. 另一邊,大火在鑊中燒熱油1湯匙半。
3. 爆香洋蔥。
4. 加入三色椒。
5. 洋蔥已炒至金黃色,連同三色椒放上碟。
6. 排骨繼續炆。
7. 另一邊,大火在鑊中燒熱油2湯匙。
8. 放麪落鑊,轉中慢火,烘2~3分鐘至金黃色,反轉繼續烘。
9. 在鑊邊加入油1湯匙,繼續烘。
10. 排骨,用筷子試一試可否穿過,如果可以,加入三色椒及洋蔥。
11. 麪已煎好,放上碟。
12. 排骨、三色椒、洋蔥及豉汁,放在麪上。
13. 完成,可享用。

Stir frying noodles with pork ribs and black bean sauce

Ingredients:
Pork ribs 12 taels
Noodles 4 Nos.
Tri~colour bell pepper appropriate amount
Onion 1 No.
Preserved beans 20 Nos.
Garlics sauce 1 tsp
Chili 1 No.

Preparation:
1. Heat up a wok of water at high flame. Soak the noodles until they turn soft. Drain.
2. Pork ribs, cut into small pieces. Rinse thoroughly. Drain. Dry with kitchen towels.
3. Season the pork ribs:
a. Tapioca starch 1 tbsp
b. Sugar 0.5 tbsp
c. Light soya sauce 0.5 tbsp
d. Oyster sauce 0.5 tbsp
e. Garlics sauce 0.5 tbsp
f. Preserved beans (already rinsed)
Mix well.
4. Tri~colour bell pepper, get it rinsed. Divide each one into 4 shares. Remove seeds. Cut into small pieces.
5. Onion, get it rinsed. Divide it into 4 shares. Get it peeled. Divide each share into 4 pieces. Press it slice by slice with a chopper.
6. Chili, cut the anchor. Divide it into 2 shares vertically. Remove seeds. Dice in small cubes.

Steps:
1. Put pork ribs in pot. Add in water 800ml. Heat up at high flame. Turn to medium~low flame after boils up. Braise for 10~12 minutes.
2. On the other side, heat up oil 1.5 tbsp at high flame in wok.
3. Fry onion well.
4. Add in tri~colour bell pepper.
5. Onion has been fried into golden yellow, put on plate with the bell pepper.
6. Continue to braise the pork ribs.
7. On the other side, heat up oil 2 tbsp at high flame in wok.
8. Put noodles in wok. Turn to medium~low flame. Fry for 2~3 minutes until it turn in the colour of golden yellow. Flip it over and continue frying.
9. Pour oil 1 tbsp alongside the wok and continue frying.
10. Pork ribs, test with a pair of chopsticks see if it can be pinched through. If it can, add in the bell pepper and onion.
11. Noodles have been fried well, put on plate.
12. Pork ribs, bell pepper, onion and black bean sauce, put on top of noodles.
13. Complete. Serve.
