Ricki师傅用自炸的新鲜云吞皮替代常见的现成捞生脆饼,配于新鲜的三文鱼生片和蔬果,再加入Nonosen荔枝酱或我们家的自制捞生酱,口味清爽又带有酥脆感,美味!重点是,自家做的捞生够经济,今年就自做道捞生贺新年吧!

份量: 9-10人份
准备时间:15分钟
煮时:15分钟

材料A:
100克 三文鱼生片
1条 日本青瓜(切薄片)
1粒 大葱头(去衣切薄片)
1粒 沙葛(去皮切丝)
1条 胡萝卜(去皮切丝)
1棵 生菜(切细叶)
少许 红菜头(切丝)
少许 幼姜(去衣切丝)
少许 葱 (切细)
少许 香菜(切细)

材料B:
100克 云吞皮(切小片)
适量 花生碎(炒香)
适量 芝麻(炒香)

调味料:
适量 Nonosen荔枝酱*

准备功夫:
1. 云吞皮炸酥脆,沥油待用
2. 适量的糖加入日本青瓜片,用块干净的布,把青瓜片包起来,扭去水份,待用
3. 把红菜头丝,姜丝,适量的醋和盐,混合腌制1小时,沥水待用
4. 把姜丝,适量的醋和糖,混合腌制1小时,沥水待用

做法:
1. 把捞生材料A摆盆,随后再加入材料B
2. 加入适量的Nonosen荔枝酱*
3. 完成上桌

小提示:
买不到Nonosen荔枝酱的朋友可以用我们南洋小厨的自制捞生酱做替代:
2汤匙 麦芽糖
2汤匙 热水
1汤匙 酸梅酱
1茶匙 柠檬汁
搅匀即可,调味料份量可以随自己喜好做调整

Ingredients A:
100 g salmon slice
1 pc Japanese cucumber (slice it)
1 pc onion (peel off skin, slice it)
1 pc Chinese turnip (peel off skin, slice it)
1 pc carrot (peel off skin, slice it)
1 strand lettuce (cut it)
Some beetroot (slice it)
Some ginger (peel off skin, slice it)
Some spring onion (slice it)
Some coriander (slice it)

Ingredients B:
100 g wonton wrapper (cut into small sections)
Some crushed peanuts (saute it)
Some sesame (saute it)

Seasoning:
Some Nonosen lychee dressing

Preparations:
1. Deep fry the wonton wrapper, rinse and set aside
2. Add some sugar to the Japanese cucumber, use a clean cloth to wrap it, squeeze out the juice, set aside
3. Mix together sliced beetroot, some vinegar, salt and marinate for 1 hour, rinse and set aside
4. Mix together sliced ginger, some vinegar, sugar and marinate for 1 hour, rinse and set aside

Steps:
1. Plate all Ingredients A, then dress with Ingredients B
2. Add in some Nonosen lycee dressing*
3. It’s done, huat ah!

Note:
You can substitute Nonosen lychee dressing with below:
2 tbsp maltose
2 tbsp hot water
1 tbsp sour plum sauce
1 tsp lemon juice
Just mix well above
