July 4th, Independence Day in the U.S.A., the declaration of independence by the Continental Congress. What does that mean in the U.S., it’s that time of the summer when we are lighting off fireworks and BBQing anything we can. If you have a gas or charcoal BBQ, or better yet, a smoker, well then life is easy. If you don’t, your stuck with pan fried burgers and hot dogs. Fear not my friends we have options! Take a gander at this recipe, BBQ Ribs in a pressure cooker! It’s so easy, no need for the other devices, just you, some liquid, and a pressure cooker. Now you have some damn fine BBQ ribs to enjoy on the 4th of July !!
Tweaked a bit from a Jeffery Eisner recipe, if you don’t know who he is, look him up on YouTube, he has some great recipes.

Ingredients
+++++++++
1-2 Racks of pork ribs (I used St. Louis style)
32-64oz Apple Juice (to the MAX line on your inner liner of your pressure cooker)
*Don’t worry if the ribs are not completely submerged, it won’t make a difference
1c Apple Cider Vinegar
1/4c Liquid Smoke
Any style of BBQ sauce you like

Directions

1. Prep your ribs by removing the membrane on the back side of the ribs, this is not mandatory, its your preference. You can see in the video the difference between leaving it on and taking it off.
2. Add the ribs to the inner liner of your pressure cooker in a circular direction.
3. Add the liquids, remember not to submerge the ribs completely, follow the maximum fill line of your pressure cooker. It is usually stamped on the liner itself.
4. Place the lid and lock it down, set the vent to sealing (follow directions of your cooker)
5. Set the pressure cooker to:
- High Pressure
- 18-20 minutes for very tender, fall off the bone
6. Then press Start
7. Wait for 12-15 minutes of Natural Release (don’t open vent)
8. When timer hits 000 start preheat oven broiler
9. After the NR time, place a towel over the vent and release the pressure.
a. Wait until its completely done releasing pressure before removing the lid
10. Remove ribs and place on an oven safe baking pan
(Baking plate for those that know 😉)
11. Baste both sides with desired BBQ sauce
12. Place under broiler for 3-6 minutes for the sauce to caramelize.
13. Carefully remove from the broiler, let cool, and devour 😉

You can pair this with some great beer (like Guinness, my favorite), some coleslaw, I have a video for that too, maybe some potato salad, yep, video there too, or just good friends.
