If you've never tried kaya in your life, you need to!! It's similar to jam but not made with fruits. It's extremely fragrant and when eaten with butter on toast, I'm in heaven! I usually watch Netflix while stirring the kaya so it's no hassle at all.

Ingredients:
4 egg yolks (large eggs)
200ml coconut cream (the top section of the canned coconut milk)
80g coconut sugar
4 pandan leaves (screwpine leaves)

1. Separate egg yolks from egg whites. Try to get as much egg whites apart from egg yolks to prevent lumps in the kaya
2. Add coconut sugar, coconut cream and pandan leaves in a bowl
3. Steam coconut sugar, coconut cream and pandan leaves for 20 mins
4. Remove pandan leaves
5. Take some coconut sugar, coconut cream and pandan leaves mixture and add it to the beaten egg yolks. This will help the egg yolks mix smoothly into the kaya
6. Pour the mixture (egg yolk + kaya) in with the rest of the kaya
7. Cook over low-medium heat for about 20 mins until it thickens
