This unique lo mein dish is not something you often see. It's as homestyle as it gets. Tender chunks of chicken smothered in fresh ground pepper and seasoning. With some sweet bell peppers and onions, the flavors are amazing. Definitely not the usual lo mein dish but delicious and restaurant quality nonetheless.

Ingredients:
250g chicken thighs
400g lo mein or yakisoba noodles
1/2 large bell pepper
1/2 medium yellow onion
40g carrots

Chicken Seasoning:
2 teaspoons ground black pepper
2 teaspoons Chinese cooking wine
1 teaspoon dark soy sauce
1/2 teaspoon sugar
1 teaspoon cornstarch
2 teaspoons cooking oil

Lo Mein Sauce:
2 tablespoons oyster sauce
1 tablespoon light soy sauce
2 teaspoons dark soy sauce
1 teaspoon sugar
1 tablespoon water

Recipe:

Cut chicken thighs into small bite-sized chunks. Add all the seasoning to the chicken **except the oil for now**. Mix well first and then go ahead and add the 2 teaspoons of oil. Marinade for 15 minutes.

Cut vegetables up in the way shown in the video.

Combine all lo mein sauce ingredients into a bowl and mix well.

On a hot pan set on medium heat add 2 tablespoons of cooking oil when the pan smokes. Add chicken to the pan and spread out. Once the chicken is spread out on pan let the chicken sear for at least 20 - 30 seconds on one side. Then flip and cook the other side. Until about 75% done and set aside.

On a clean pan heat on medium-high heat. When pan smokes add 2 tablespoons cooking oil. Throw in the bell peppers, onions, and carrots.

Cook until the vegetables start to shrink and the onions turn clear.

Remove and set aside with cooked chicken.

On the same pan heat on medium-high heat. When the pan starts to smoke add 2 tablespoons of cooking oil. Then add lo mein noodles. Cook for about 1 minute. Then toss in the lo mein sauce. Mix and combine until all noodles are covered.

About a minute later add the cooked vegetables and chicken. Cook for another minute or until the chicken is fully cooked. Which shouldn't take long.

Flip off the heat and toss in spring onions. Mix well the heat from the wok and the ingredients will cook down the spring onions.

Plate and enjoy!
