Mutton Cutlet Recipe:

Mutton (boneless cubes) - 500 grams
Potato (whole) - 300 grams
Onion (finely chopped) - 1 Cup
Green Chilli (finely chopped) - 5 nos
Curry Leaves (finely chopped) - 20 nos
Ginger (finely chopped) - 1 tbsp
Ginger (roughly cut) - 1 inch
Salt - ½ tsp
Black Pepper Powder - ½ tsp
Garam Masala - ½ tsp
Egg (beaten) - 2 nos
Breadcrumbs - 1 Cup
Oil (for shallow-frying) - As Needed

Cooking Instructions:

1. Boil the potatoes whole with skin in salted water until they can be pierced easily with a fork. Peel the potatoes and mash them.

2. Pressure cook the mutton with ginger and salt for 3 whistles. Reduce the flame to low after the 1st whistle.

3. Coarsely mince the cooked mutton in a mixer or a food processor.

4. Heat oil in a pan and saute onion, ginger, curry leaves and green chilli. Add the cooked mutton and the potato. Add pepper, garam masala and salt. Saute until any excess moisture has evaporated.

5. Once the mixture has cooled slightly, shape the mixture into cutlets.

6. Dip the cutlets first in beaten eggs and then in breadcrumbs. Shallow fry until golden brown on both sides.

Cooking Tips:

1. The cutlets can also be stored in the refrigerator for up to 2 days. Shallow fry as required.

2. The cutlets can be frozen for up to a month. Remove from the freezer and directly shallow fry them.

3. Other red meats can also be used for this recipe.

4. While coating the cutlets, use one hand for the egg mixture and one hand for the breadcrumbs. This makes the process less messy.
