📖 here are the recipes 📖
01:52 - cookies 🍪
1 cup flour
1/2 cup salted butter, softened
1/2 cup powdered sugar
vanilla + salt
1 tbsp cocoa powder + splash of cream (if needed)
chocolate chunks
1. In a large mixing bowl, cream together the butter and vanilla. Add the powdered sugar, beating again until light and fluffy.
2. Add in the dry ingredients, mixing just until a crumbly dough forms. To ~1/4 cup of the dough, add the cocoa powder.
3. Turn each ball of dough doughs out onto a piece of parchment. Use your hands to press it together into a flattened square, then roll them out to ~1/4 inch thick. Pop them into the fridge for at least an hour to firm up.
4. Preheat the oven to 350 degrees.
5. Slice the dough into “pixels”, using a knife to cut the slab into 1/4 inch cubes. Arrange the cookie dough cubes accordingly, making sure the gently press them together to ensure that they stick together while baking. Chill the cookies in the fridge to set, ~15 minutes, before baking.
6. Bake for 14-15 mins or until the edges start to slightly brown. Once done baking, quickly place chocolate chunks on top of some of the brown pixels (I chose the lighter brown pixels from the in-game cookie) and use a toothpick to smooth out the chocolate.
05:43 - cake 🍰
4 cups flour
1 tbsp baking powder
2 tsp salt
6 eggs
2 cups sugar
12 tbsp butter, melted
1 1/2 cups milk
1/4 cup oil
vanilla paste
1. In a small bowl, whisk together the butter, oil, milk, and vanilla.
2. Into a large mixing bowl, beat together the eggs and sugar until it becomes fluffy and pale.
3. Add the flour, baking powder, and salt into the egg mixture, stiring just to combine. Slowly add in the wet mixture while whisking, just until the batter comes together.
4. Pour the batter into a your cake pan(s) and bake at 350 degrees F for 50-55 minutes. Cool completely before decorating!
frosting:
1/2 cup butter
2 cups powdered sugar
vanilla, splash of heavy cream
1. Whip the butter with a mixer until creamy.
2. Sift the powdered sugar in two batches, beating on low after each addition. Add the vanilla and a tablespoon of cream at a time until it reaches a fluffy consistency.
strawberry squares:
12 oz strawberries, diced
1/4 cup sugar
1/2 lemon, juiced
1 tbsp gelatin + 1/4 cup water
1. Bloom the gelatin in cold water and set aside.
2. Into a medium sized saucepan, combine the blended strawberries, sugar, and lemon juice. Over medium-low heat, cook the syrup until it starts to slightly thicken up. Strain this mixture through a sieve.
3. Dissolve the gelatin by microwaving it for 3-5 seconds. Stir this into the berry mixture and pour onto a baking sheet, spreading it into a thin layer. Let this set in the fridge, ~2-3 hours.
10:52 - pumpkin pie 🎃
2 1/2 cups flour
1 tbsp sugar
1 cup salted butter, chilled and cubed
4 tbsp ice water
1. Combine all of the dry ingredients in a large mixing bowl. Toss in the butter and using the tips of your fingers, cut the butter into the flour until it resembles wet sand and some larger chunks of butter are still visible.
2. Add the cold water 1 tsp at a time until the dough can hold its shape when pressed together.
3. Divide the dough into 2 balls and flatten into disks between parchment paper. Chill for at least an hour before using!
4. Roll out a slab of dough and gently press it into your pie dish. Blind bake the crust in a 400 degree oven, just until it starts to brown ~10 mins.
filling:
15 oz can pumpkin puree
4 eggs
3/4 cups heavy cream
3/4 cup brown sugar
2 tsp cinnamon, 1/2 tsp cardamom, 1/2 tsp nutmeg, 1/2 tsp clove
vanilla + salt
1. For the custard, whisk the eggs and sugar until it lightens in color. Whisk in pumpkin, spice, and cream until smooth.
2. Pour in the filling into a partially baked crust. Using the excess dough, cut out small squares of dough to decorate the crust.
3. Bake for 45 to 60 minutes until puffed around edges and center wobbles gently. Turn off oven and prop door open and let cool completely before enjoying : )
