Ingredients:
200g soft butter at room temperature
150 g powdered sugar
3 large eggs
1 1/2 tsp vanilla extract
150 g sour cream
150 g Keffir \ Buttermilk
350 g white flour
1/2 level teaspoon baking soda
10 g baking powder
1/2 tsp salt
250 g fresh blueberries + a few blueberries to decorate on top + 1 tablespoon of flour

The Streusel (Crumb topping)
50 g light brown sugar
70 g white flour
1 1/2 tsp ground cinnamon
1/4 tsp fine salt
50 g cold butter
90 g almond flour


Preheat oven to 180 degrees, 356F
Line a mold of cupcakes with muffin liners.

In a mixer with a whipping hook, cream the butter, powdered sugar, and vanilla extract until a uniform and smooth mixture is obtained.

Add the eggs one by one, and wait for the assimilation before adding the next egg.

Add the sour cream and Buttermilk\keffir and mix well. it is fine and everything is fine with the mixture.

Add the flour, baking soda, baking powder, and salt and mix only until a uniform mixture is obtained and you do not see chunks of flour. Avoid over-mixing.

In a separate bowl, mix 250 g of blueberries with a tablespoon of flour so that they do not fall to the bottom of the mixture.

Add the floured blueberries to the cake mixture and fold in with the help of a teapot.

Prepare the streusel (crumbs topping)

In a bowl, mix all the ingredients for the streusel with a hand wrapped in a glove (better, since our hands are warm and the glove masks the body heat and it is simpler to get a streusel without the butter melting). Mash the butter into the rest of the ingredients until a crumbly mixture is obtained.

Not sure the Streusel is ready? Hold the mixture in the palm of your hand, if dough is formed while holding, the mixture is ready. But leave it in the crumbs, yes?

With the help of an ice cream scoop or a spoon, fill a low layer of the mixture inside the muffin liners.

With the help of a spoon, sprinkle a layer of streusel on the mixture.

Sprinkle the rest of the mixture over the streusel so that all the muffins are in as much quantity as possible.

Sprinkle streusel on top of all the muffins again.

You can decorate with a few fresh blueberries on each muffin.

Bake for about 20-25 minutes until the muffins start to brown and a toothpick inserted into the center of the muffins comes out with moist crumbs.

Remove from the oven and let the muffins cool.
