Ingredients
1 cup Kindey beans (Rajma)
1.5 tsp Chilli powder
1 tsp Coriander-cumin Powder
1/2 tsp Garam masala
Salt to taste
1 cup water
1 tbsp oil
1/4 cup butter
1/2 cup cabbage
1/2 cup sweet corn
1 tsp chilli flakes
1 tsp oregano
1/2 tsp black pepper powder
1/4 cup chopped coriander
1 cup rice
3 tbsp Chipotle sauce
3 tbsp cheese white sauce
2 tbsp grated cheese
1/4 cup avocado Guacamole
1/4 cup Salsa
Method
• Take 1 cup of rice, wash it well, and cook as you usually would.
• Soak 1 cup of rajma (kidney beans) overnight.
• Boil until soft but still firm.
• In a pan, heat oil and add the boiled rajma. Season with spices: chili powder, coriander-cumin powder, garam masala, and salt to taste.
• Add 1 cup of water, mix well, and let it simmer, mashing slightly with a spatula. Cook until the liquid has thickened then set aside.
• In a separate pan, heat 2 tbsp butter.
• Add chopped cabbage and boiled sweet corn. Cook until the cabbage is slightly tender. Set aside
• In the same pan, add 2 tbsp butter.
• Add oregano, chili flakes, a pinch of salt, and fresh coriander leaves.
• Add the cooked rice and gently mix everything together.
• In a serving bowl, add a layer of the seasoned rice.
• Add a portion of the cooked rajma, sauteed cabbage and sweet corn, guacamole, and salsa. cabbage and sweet corn, guacamole, and salsa on top.
• Drizzle with your favorite sauces, like chipotle, cheese sauce, or mayonnaise.
