Kalat is one the more interesting episodes in the Pakistan on a Plate adventures; it is Baluchistan's Khanate pre Pakistan and before that the seat of the Seva sometimes spelled SEWA dynasty for centuries.....you cannot know Baluchistan unless you go to Kalat.
This ancient place is also the birth place of Kali Mata Godess whose name lives on forever as the city's name.
Shinai the wild pistachio berries/nuts are very unique to Baluchistan called Guan in Brahvi and this recipe is quite special linking the Pukhtun and Brahvi belts in shared food heritage.
Those who taught us how to make it in Kalat were quite amused since it has become out of fashion but they were very happy that someone cared and was reviving it.
Another recipe which we share here with you is Kak the very Baluchistani bread which is probably also The original of all breads, its fundamentals as will see tell you the conditions of Baluchistan and how for survival purposes, basic nourishment was made and preserved for long periods of journeys or as a result of regular food or the absence of food.
My curiosity, hopefully yours too, about who are the Baloch and Brahvi people leads me to some interesting revelations and conversations!
