Recipe: Bourbon Shortbread Truffles Book: " Christmas cookie swap"

12 ounces bittersweet baking chocolate, chopped
11/2 tbs cold butter, chopped
2 tsp vanilla extract
9 tbs whipping cream
1/4 cup bourbon
1 (5.3-ounce) package pure butter shortbread cookies, crushed
2 cups chopped salted roasted pecans
waxed paper

1. Stir together the chocolate, butter and vanilla extract in a large bowl.
2. Cook the whipping cream and bourbon over medium 3 to 4 minutes until hot. Pour over chocolate mixture.
3. Stir the chocolate mixture until melted and smooth. Microwave for 30 seconds if it does not melt. Stir in crushed cookies. Cover and chill 3 hours or until firm.
4. Place pecans in bowl. Shape the chocolate mixture into 1 inch balls. Roll the balls in chopped pecans. Place on baking sheet lined with wax paper. Chill one hour. Store tightly covered in refrigerator up to five days.
