The Mai Tai is a firm favourite among bartenders and cocktail drinkers alike. Our version follows the classic recipe - a blend of rums, triple sec, orgeat, lime and bitters, shaken and served over crushed ice with an array of tropical tiki-style garnishes. This is the quintessential tiki cocktail - a fruity, drinkable, tropical tasting cocktail with a subtle but distinct punch of rum strength.

INGREDIENTS:
🍹 20ml Dark Rum
🍸 20ml White Rum
🍾 10ml Overproof Rum
🍊 10ml Triple Sec
🍈 25ml Lime Juice
🌰 20ml Orgeat
🌿 2 Dashes of Angostura bitters
🍊 Orange SLice, Lime Wedge and Mint Sprig for Garnish

EQUIPMENT:
- Shaker
- Jigger/Measure
- Elbow Press
- Hawthorn Strainer
- Cubed Ice

METHOD:
1) Using your jigger to measure add the rums, triple sec and orgeat to your Boston glass or the bottom half of your shaker
2) Using your elbow press and your jigger to measure, squeeze 25ml of lime juice and add it to your shaker
3) Add 2 dashes of Angostura bitters to your shaker
4) Fill with cubed ice and seal
5) Shake vigorously for 10-15 seconds
6) Strain into a large rocks glass
7) Fill glass ⅔ with cubed ice and top with crushed
8) Garnish with an orange slice, lime wedge and mint sprig
9) Serve and enjoy!

HISTORY:
This classic tiki drink, like so many of its contemporaries, was invented by tiki legend Victor ‘Trader Vic’ Bergeron back in 1944. The Mai Tai was the subject of some contention, with Vic’s tiki forerunner, Donn Beach claiming to have invented the drink 11 years before, but most agree that this was in reference to his drink a Q.B Cooler which bore only a passing resemblance.

The Mai Tai went on to become Hawaii’s national drink and even featured prominently in the Elvis Presley film Blue Hawaii.
