Habichuelas Rosadas [Pink Beans Puerto Rican Style]

Let’s Create! Perhaps one of the most underrated beans. We call them in Puerto Rico “habichuelas rosadas”. But in Puerto Rico they are arguably only second to the red beans. The way I decided to prepare this pink bean stew was nearly 💯 natural replacing packaged ingredients for more natural ones.

I also decided to use my homemade sofrito. This sofrito I created 13 months ago and refrigerated and still looks and tastes fantastic! However you can also prepare real-time sofrito by simply chopping some easy to find ingredients.
