Haitian Eat Mud Cookies To Survive. Mud cookies or Bonbon te is haitian cookies made from soil.

The village of Sapaterre is located in the mountains about 20 miles from the much larger city of Hinche, in the Central Highlands region of Haiti. As a very poor area, eating delicious food is a dream for most people here. However, with the economic limitations that exist, they can only eat food from the ground to relieve hunger.

Because it has become a routine and habit, now Bon Bon Te has become a very popular food here. Due to the soaring price of basic necessities and the high level of poverty, many Haitians in the slums depend on eating these mud biscuits for their livelihood. Moreover, when they cannot afford to buy rice, they are forced to eat Bonbon Te three times a day.

Bon Bon Te is purely made from basic ingredients in the form of clay and mud. As a flavor enhancer, a little salt is mixed in during the process of making this cake. This mud dough is then formed like a biscuit plate. These mud plates are made and arranged in rows in an open place outside the house. Furthermore, Bon Bon Te is dried in the hot sun until dry. Once completely dry, this cake is ready to be eaten to fill your stomach from the pangs of hunger.
