My mom asked if I could smoke a brisket for her and my dad's 45th anniversary. Of course I said yes. I purchased a 13 pound Prime 1 Brisket from HEB for $60. I trimmed the brisket, but I kept as much meat as I could. I wanted to preserve as much meat as I could, so their could be plenty of brisket for my family to eat. We all brisket will shrink during the cook. I seasoned the brisket with The Salt Lick BBQ. A favorite rub of mine. I started my Highland at around 10:30pm and put the brisket into my highland at 12am. During the cook, I used post oak and temperature of my Highland would range from 250f-260f. I wrapped the brisket at the seventh hour. I liked the way the color of the bark and wrapped based on that. I removed the brisket once it was probe tender. Total cook time 13 hours. 10-15-23
