Scrumptious Sabudana Aloo (Tapioca Pearls) Roti


Ingredients -
3- 4 cups of Sabudana or Tapioca Pearls chopped 2 onions,
2 or 3 boiled, peeled & grated potatoes, coarse cumin & pepper powder,
finely chopped 3 - 5 green chillies,
finely chopped coriander leaves, chopped curry leaves & salt

Dry roast the tapioca pearls or Sabudana and keep aside for a while until cools. Once it cools down, make a fine powder & sieve the sabudana flour.

In a mixing bowl , put peeled, boiled & grated potatoes, add in finely chopped 3-4 green chilles, chopped curry leaves, finely chopped coriander leaves & 3 - 4 cups of Sabudana flour or as much as required, add in 2 teaspoons of cumin pepper coarse powder, then add in salt to taste, add water little by little if required, give it a nice mix.
Adjust the dough with water for consistency. Mix it well with a hand to form a proper dough. Let it rest for 5 minutes.

The sabudana ( Tapioca )roti dough is ready to use

Make medium-sized balls & flatten it a bit by hand, then spread out on a wooden board to a round shape by rolling pin, use wheat flour while rolling it in between

Then, put it into the hot Tawa, add a teaspoon of groundnut oil. Let it cook for few minutes, then flip it another side of the Sabudana Aloo roti, & Ensure to cook both sides well

Repeat the process in the same way for as many Sabudana Aloo roti you would wish to have.
