Ingredients:
Mashed Potatoes

3 Medium Russet Potatoes
2 Tbsp. Sour Cream
1/2 Cup Chicken Broth
2 Tbsp. Olive Oil or Butter
1 Tbsp. Dry Italian Seasoning
1 Tsp. Chopped Rosemary
Salt
Black Pepper

Stuffing Ingredients
1 Bag Plain Stuffing Breading
1 Onion
2 Cups White Button Mushrooms
1 Tbsp. Minced Garlic
1 Tbsp. Olive Oil
1/4 Cup Bacon Pieces
2 Tbsp. Grated Romano/Parmesan Cheese
1/2 Tbsp. Dry Parsley
1 Tbsp. Dry Italian Seasoning
1-2 Cups Chicken Stock
Salt
Black Pepper

Making the Turkey Breast Roll
3 Lbs. Turkey Boneless Turkey Breast w/ Tenderloin

Slice the turkey breast down the middle to butterfly it.
Season with olive oil, salt, black pepper, and Italian seasoning.

Layer the 1/2 inch thickness of the bread stuffing mix on the turkey followed by 1/2 inch layer of the mashed potatoes.

Roll the turkey and stuffing pressing it together and using some butchers twine to tie it in 2 inch intervals.

Heat a large skillet or pot and sear the out side of the turkey roll.

Place the turkey into your Ninja Foodi, Air Fryer or oven on a grid or rack.

Bake at 350°F until the internal temperature reaches 165°F (use a meat thermometer to verify)
Baste with some chicken broth approximately every 10 minutes until it's done.

Remove from heat and cover with some aluminum foil to let rest for at least 15 minutes.

Use the drippings from the turkey and basting liquid to make your gravy.
Add 1 Tbsp. of cornstarch to 2 Tbsp. of warm water to make a slurry. This will be added to the gravy to help thicken it.
In a small pot over low heat, add the drippings liquid, corn starch slurry, salt, black pepper and fresh parsley.
Continue to stir until the gravy thickens to your desired consistency.

Slice the turkey roll into 1-2 inch wheels placing it over some stuffing and pour on the gravy.
