I've tried several recipes for Pickled Peppers. I think THIS one is the best. It's easy to do, and your pickles will come out crisp and delicious. The fact that they are infused with olive oil really makes them EXTRA tasty !

Recipe (makes 8 pints)

6 cups vinegar
1 1/2 cups olive oil
1 1/2 cups water
1 tsp canning or pickling salt
1 tsp pickling spice
1/8 rounded tsp Pickle Crisp

I used about a 1/2 tsp of garlic powder, but you can add a clove of garlic, and maybe slices of onion to taste.

Wash peppers. Remove stems. Puncture larger peppers with knife. Pack peppers in jars.
Add pickling spice, salt and pickle crisp to the peppers in the jars.
Bring vinegar, olive oil and water to a boil.
Slowly pour brine (vinegar,olive oil and water) over peppers in jars.
Wipe down the tops of the jars.
Put on heated lids. Put on rings and tighten.
Place jars in (hot) water bath (the water needs to cover the jars at least 1/2") and bring back to a boil (add a tablespoon of vinegar to the water to prevent spotting on the jars).
Process jars for 10 minutes AFTER brine has resumed boiling.
Take the pickled pepper jars out of the water bath, and place on towel or cooling rack.
Listen or watch for jars to seal.
They should be ready to eat in about 2 weeks !
