Nature is for us the essential raw material. We start from the
mineral content of the soil, by carefully selecting the location of
our vineyards: the Pinot Nero and Chardonnay come from vines
cultivated at 650 metres, in the unspoilt landscape of the high
hills above Modena at Riccò di Serramazzoni. Respect for nature
for us means gathering all the grapes by hand and selecting the
best bunches, with the aim of producing a completely biological
grape harvest by 2017.
From the hilly vineyard a limited production of Méthode
Champenoise sparkling wine is made with great care and natural
methods. These sparkling wines can attract the most discerning
tastes of those searching for elegance and absolute purity.
From the vineyards located between the Secchia and Panaro
rivers, in typical Sorbara countryside, we harvest the Sorbara
Lambrusco grapes, with a very high organoleptic profile, which
will be used to produce the traditional method LAMBRUSCO
wines, for those searching for a new, refined LAMBRUSCO wine,
always ready to amaze.
Traditional fermentation in bottles represents a tribute to the
passage of time. The long maturation period of the wines with the
yeasts produces dreams of highly refined perlage.
Uncorking a bottle of Cantina della Volta means tasting fine and
luminous bubbles with eclectic flavours, which are poetry for the
eyes and the palate.
The meaning of téchne, a term that the Romans already referred
to as an "ars" ("art"), includes a "know-how" as well as a simple
"knowledge".
The traditional Méthode Champenoise consists of a series of steps and procedures implying a profound knowledge, and, of course, a rigorous method, starting from the fermentation in steel vats, to the re-fermentation in bottles, to the next step of disgorging and, finally, the dosing of the liqueur d’expedition.
These processes can be learnt empirically, since they have been
traditionally devised and transmitted.
From an early age, Christian Bellei travelled together with his father Beppe to Epernay, in France, the land of the noblest sparkling wines. From his father he learnt the secrets of silence, the beauty of manual processes, and a wise use of time, bringing elegance and refinement to the wine.
