How to braid Choreg - Armenian Easter Bread - the fastest, easiest and most uniform way.

Armenian Choreg 🇦🇲 - we usually make this challah-like bread during the holidays. It is an egg and butter based bread with some special seasonings that give it its unique flavor: mahlab, mastic and nigella seeds. I’ve been making these for a fundraiser so I left out the nigella seeds because not everyone is a fan, kids in particular 😉

INGREDIENTS
7 eggs
2 cups granulated sugar
1 1/2 cups salted butter, softened
1 tsp mastic (crushed with 1 tsp granulated sugar)
1 tbsp ground mahleb/mahlab
1 1/2 cups whole milk, warmed to ~100F
2 tbsp yeast
8 1/2 cups unbleached flour
3 tbsp nigella seeds
1 egg
Splash of ouzo/arak or cognac or whiskey

✴️ if you’re going to use unsalted butter, add 1 tsp salt

DIRECTIONS
1️⃣ warm the milk and stir in the yeast and set aside for it to get frothy
2️⃣ in a stand mixer, beat together eggs and sugar. Add the butter, mastic and mahlab
3️⃣ add in 3 cups flour and mix till combined. Add half the milk. Mix. Add 3 cups flour. Mix. Add rest of milk. Mix. Add 2 1/2 cups flour and nigella seeds. Mix till well combined.
✴️ Transfer to a big bowl, cover with plastic wrap and place in a dark warm spot to rise 6 hours or overnight.
4️⃣ preheat oven 350F. Begin shaping dough. I divide the dough into 3oz portions (this recipe will make 30-32). Once shaped, place them on a lined baking sheet. Beat an egg with a splash of ouzo and brush over the tops of each serving.
5️⃣ bake 8 minutes, then swap and turn the sheets around in the oven and bake another 8 minutes or until golden.

❇️ try not to burn yourself as you scarf these down right out of the oven. They are amazing with some black coffee. Enjoy!
