If you love Mexican street corn, you're going to love this grilled corn salad recipe! Grilled corn, tons of veggies and a creamy bacon vinaigrette will make this the star side dish of all your summer cookouts!

INGREDIENTS
• 6-8 ears fresh corn, shucked and cleaned
• 6 tbsp olive oil
• salt & fresh ground black pepper
• 1 tsp smoked paprika
• 1 lb bacon, cut into ½ inch pieces
• ½ cup sour cream
• ½ cup mayonnaise
• 2 tbsp reserved bacon fat
• juice from 1-2 limes
• 1 tsp ancho chili powder
• 1 tbsp Chef Ange Base Seasoning -    • The ONLY Seasoning Blend Recipe You'l...  
• 1 red bell pepper, small dice
• 1-2 jalapeño peppers, seeds removed and small dice
• 3-4 scallions, greens only
• ½ medium red onion, small dice
• 20-25 cherry tomatoes, halved
• Small bunch cilantro, finely chopped
• 2/3 cup cotija cheese, crumbled

DIRECTIONS
1. Season corn with 2 tbsp olive oil, salt, pepper and ½ tsp paprika
2. Grill corn over high heat turning every few minutes for 5-10 minutes or until charred on all sides. Remove from heat and let cool.
3. In a pan oven medium heat, cook bacon until crispy and remove with a slotted spoon. Reserve rendered bacon fat and strain. Set aside.
4. In a medium sized bowl, whisk together sour cream, mayonnaise, 2 tbsp bacon fat, lime juice, chili powder, ½ tsp paprika, Chef Ange Base Seasoning -    • The ONLY Seasoning Blend Recipe You'l...  . Set aside in fridge while preparing salad ingredients.
5. In a large bowl with a smaller bowl upside-down and inside the large bowl, use a small and sharp knife to remove corn kernels from cob. Add bell pepper, jalapeno pepper, most of the scallion greens, bacon, cilantro and cotija cheese.
6. Add creamy vinaigrette and mix well. Transfer to serving bowl and garnish with remainder bacon, scallion green cilantro and cotija cheese.
