Katsudon (Japaneseカツ丼) is a Japanese dish. The name is composed of tonkatsu (breaded pork cutlet) and donburi (ceramic bowl). It is a bowl of rice topped with a half-cooked egg and a crispy schnitzel.

Recipe:
-250g rice
-200g pork (or chicken)
-Flour
-Panko

-Batter:
-80g flour
-120ml of water
-1 egg
-Salt

-Sauce:
-1 onion
-240ml chicken broth (any other broth will do)
-2 tbsp sake
-3 tbsp soy sauce
-2 tbsp mirin
-2 tbsp sugar
-2 eggs

toppings:
-Spring onions
-Sesame

Tenderize the meat with a hammer or knife, Season with salt. Oil on medium heat approx. 180°C/360°F. Dredge the meat first in the flour, then in the batter and finally in the panko. Fry until golden brown on each side. Leave the meat to rest for a few minutes.

Fry the onions briefly for extra flavor. Toss over high heat and add the sauce until it starts to simmer.
Beat 2 eggs and slowly add them to the sauce. Cook for 1 minute and turn off the heat. Put the sauce on the rice, the katsu on top. Add fresh green onions and some sesame.
