Ingredients:

Sauce:
28 oz Whole Peeled Tomatoes
6 oz Tomato Paste
6 Garlic Cloves
½ Red Onion
2 tbsp Dried Parsley
2 tbsp Dried Basil
½ tsp Pink Salt
¼ tsp Crushed Red Pepper Flakes
15 Cracks Black Pepper
½ cup Filtered Water
1 Bay Leaf
1 tsp Honey
1 tsp Aged Sherry Vinegar
3 tbsp Olive Oil
splash of Filtered Water

Meatballs:
16 oz Bison
2 tbsp Onion/Garlic Mixture
½ tsp Pink Salt
10 cracks Black Pepper
1 tbsp Dried Parsley

1) Make the onion/garlic mixture: Peel and coarsely chop onions and garlic. Place in blender or food processor and blend until smooth. Set aside 2 tablespoons for meatballs.
2) Make the meatballs: Combine meatball ingredients in a medium bowl and mix well. Roll into quarter size meatballs.
3) Brown the meatballs: In a large pot over medium high heat, add 2 tablespoons olive oil and then add meatballs. Don't crowd the pan; work in batches. Cook on both sides until lightly browned. Then remove and set aside.
4) Sauté the onion/garlic mixture: Remove pot from heat and wipe out the inside with a paper towel. Return the pot to the burner and add remaining olive oil. Reduce heat to medium low. Add pureed onion and garlic mixture and sauté until fragrant.
5) Blend the tomatoes: Meanwhile, add a can of whole tomatoes to the blender and blend well.
6) Make the sauce: When the onion and garlic mixture is fragrant, add the blended tomatoes and mix. Add ½ cup water to the blender and pulse to ensure that you get all the tomato mixture out. Add it to the pot. Add the remaining sauce ingredients and stir. Bring to a gentle boil, then reduce heat and simmer on low heat, covered, for 45 minutes, stirring occasionally.
7) Serve: with your favorite pasta or use with your favorite pizza recipe. Enjoy!
