So is this juice really magic?
Acid-base indicators are substances that change color when an acid or base is added to them. Indicators change color as the concentration of hydrogen (H+) ions changes a solution.
And a super interesting natural acid-base indicator is red cabbage juice. It’s actually purple juice to start with but it changes color lots of times depending on the pH of the solution.
Cabbage juice is red in a strong acid, pink in a weak acid, purple when neutral, blue in a weak base, green in a stronger one, and yellow in a very strong base. So you can use it to make fruit punch, blue raspberry, lemonade, and even kale. Pretty amazing that one substance can undergo that many color changes.
