Sugar Cookie Bars taste like a soft sugar cookie but without the hassle of chilling or rolling the dough. These tender little cookies are topped with a light, creamy frosting that isn't too sweet. Some colorful sprinkles make the cookies as beautiful as they are tasty.

-Cookie Bars
Butter (softened) ½ cup (113 g)
Sugar ⅔ cup (134 g)
Powdered Sugar ⅔ cup (80 g)
1 Large Egg (50 g)
Vanilla Extract 1 ½ tsp (7.5 mL)
Almond Extract ¼ tsp (1.25 mL)
Sour Cream ¼ cup (60 g)
Flour 1 ½ cup (180 g)
Baking Soda ¼ tsp (1.5 g)
Salt ½ tsp (3 g)

-Frosting
Butter (softened) ½ cup (113 g)
Cream Cheese 3 oz. (85 g)
Powdered Sugar 1 ½ cups (180 g)
Vanilla Extract 1 tsp (5 mL)
Milk 1-2 tsp (5-10 mL) as needed

Sprinkles

-Directions

1. Whisk together butter, sugar, and powdered sugar until light and fluffy. Add egg, sour cream and extracts and whisk until well combined.
2. Add flour, baking soda and salt and stir with a spatula until there are no more streaks of flour.
3. Spread evenly in a parchment lined 9×9 inch (23 x23 cm) pan and bake in a preheated 350°F (177° C) oven for 22-25 minutes. Be careful not to overbake. Cool completely before frosting.
4. To make the frosting, beat butter and powdered sugar until light and fluffy. Add 1-2 tsp (5-10 mL) of milk only if needed to properly mix the frosting.
5. Add the vanilla and cold cream cheese in 1 inch (2.5 cm) pieces and beat until fluffy.
6. Spread the frosting over the cooled bars and top with sprinkles.
