Goan Veg Samosas are different from the popular Punjabi samosas. The pastry is lighter, thinner and therefore, more crisp. Also, the filling isn't too complicated — it's in essence ‘potato bhaji’. Usually the filling, with potato, includes onion, but I've prepared here a rather quick and easy filling without any onions and with just some few spices.
This recipe makes 12 samosa pattis (pastry sheets).

Goan samosas are also available with minced meat fillings but, the veg ones are more popular as street food while the former are found at bakeries or prepared/ordered for occasions.


1 US Cup = 240ml

Ingredients:

For the pastry (samosa Patti):
1 Cup All-purpose Flour (Maida)
Salt to taste
1 Tablespoon Oil
Warm water (as needed)
Oil and Flour, for rolling out the sheets

For the filling:
500 grams Boiled Potatoes, mashed
2 Tablespoons Oil
1 teaspoon Mustard Seeds
1/2 teaspoon Cumin Seeds
1 teaspoon Garlic, crushed & chopped fine
1 teaspoon Ginger, crushed & chopped fine
1/4 teaspoon Turmeric Powder
1/4 Cup frozen Peas
1/2 teaspoon Aamchur Powder
Salt to taste

Oil for deep frying
