I'm smoking and searing a Prime 1 Tri Tip from ‪@HEB‬ on my ‪@Char-Griller‬ Gravity 980. I really like this method because you get great smoke flavor and a delicious seared crust. It's the best of both worlds! I smoked the Tri Tip with ‪@BBCharcoal‬ lump charcoal and post oak chunks. Here's what you'll need:

1 Tri Tip Roast
Salt
Granulated garlic
16 mesh black pepper
Lump Charcoal
Wood chunks

Smoke the roast at 250 degrees until it reaches a temperature 10 degrees short of your desired doneness. I cooked to medium rare, so I pulled it off at 120 degrees. After you pull the roast off the smoker, crank up the heat to 650-675 and sear all sides. I rotated the roast several times to ensure a beautiful, even sear. Cover the roast loosely with foil and let it rest for 15 minutes before slicing. Add your favorite sauce or enjoy it straight up.

The Sauces

Garlic and Herb Demi Glace
1 1.5oz tub of More Than Gourmet Classic French Demi Glace
1 Large clove of garlic
1 small bunch fresh thyme
1 cup warm water
1 pinch kosher salt
Add the Demi Glace and water to a small saucepan and whisk over medium heat until dissolved. Add the garlic and thyme and simmer on low heat for ten minutes. Add salt to taste and stir. Strain the sauce and keep it warm.

Parmesan Garlic Butter
1 stick softened butter
2 garlic cloves-finely minced
2 tbs grated parmesan cheese
2 tsp parley flakes
Add all the ingredients to a small bowl and stir to combine. Scrape the butter onto a sheet of plastic food wrap and shape into a log. Twist the ends of the plastic to keep it in place. Refrigerate until it's time to slice into dollops and serve.
