Crispy Roasted Potatoes

Ingredients:

1 kg potatoes
2 tbsp olive oil (or garlic-infused oil)
Salt
Pepper
Herbs (such as basil, thyme, or rosemary)

Method:

Start by washing the potatoes, leaving the skins on. Cut them in halves.

Place the halved potatoes in a pot, adding enough water to cover them. Season with salt and bring to a boil over medium heat. Let them boil for about 10 minutes.

While the potatoes are boiling, preheat your oven to 180°C/350°F.

Once the potatoes are boiled, drain the liquid and transfer the potatoes to a baking tray.

Drizzle the olive oil (or garlic-infused oil) over the potatoes. Give them a good toss to ensure they are coated evenly with the oil.

Season with salt, pepper, and your choice of herbs. Thyme, rosemary, and basil work particularly well for that fragrant touch.

Place the tray in the preheated oven and let the potatoes roast for about 30 minutes.

After the initial roasting, take the tray out and gently press down on each potato with a spatula or spoon to slightly flatten them.

Drizzle a bit more oil over the potatoes and sprinkle additional herbs for extra flavour.

Set your oven to grill mode and return the tray to the oven. Grill the potatoes for another 10 minutes or until they turn golden brown and crispy.
