Hi Gang it's been a while

Life has been a lot this month so I've not been able to get a video up for a bit, however when i saw these gorge heritage carrots with their tops attached I knew I had to use them in a recipe. I love using every part of food if i can!

This is really a measure with your heart recipe, roughly 40/60 spinach to carrot top and everything else is to your taste seasoning wise! I like it a little salty so i did more cheese, I like kibbly nibbly bits so i did more pine nuts' You get the idea.

This would be so easy to make veggie using an animal rennet free cheese
to make vegan I would omit the pine nuts and add cashews and a spoon of nutritional yeast.
