Christmas Petit Fours with Raspberry and Pistachio

Hi, I am Simona Callas and this is a delicious Christmas treat which I made starting from one of the most loved cakes in Romania called Amandina. I adapted the recipe for Christmas theme, so I chose a white sponge and green & pink filling. My dessert came out wonderfully. It’s fruity, delicate and soaked in syrup. Merry Christmas everyone! ❤

Ingredients

White sponge cake
• 200 g egg whites
• ¼ tsp salt
• 150 g granulated sugar
• 1 tsp vanilla extract
• 120 g cake flour

Vanilla lemon syrup
• 300 ml water
• 100 g granulated sugar
• 30 ml lemon juice
• 1 tsp vanilla extract

Fluffy chocolate ganache
• 300 g white chocolate
• 100 g hot cream
• 100 g cold cream
75 g raspberry paste
75 g pistachio paste

Glazing
• 800 g white pouring fondant
