Ingredients
1 cup Macaroni
1/2 cup chopped red bell pepper
1/2 cup shredded carrot
1/2 cup chopped onion
1/2 cup boiled sweet corn
1 chopped jalapeno
1/4 cup spring onion
1/2 cup mayonnaise
1 tbsp sour cream
Salt to taste
1 tbsp sugar
1/2 tsp black pepper powder
1/2 tsp garlic powder
2 tsp vinegar
1 tbsp chopped coriander

Method
• In a pan, bring water to a boil.
• Add salt to the water, then add the pasta.
• Boil until pasta is about 80% cooked, then drain pour cold water over it to stop the cooking process set aside.
• In a bowl, mix together mayonnaise, sour cream, salt, sugar, and black pepper.
• Add a splash of white vinegar and mix well.
• Take 2 tablespoons of the dressing and set aside for later.
• To the dressing, add chopped red bell pepper, onion, sweet corn, jalapeños, and green onions. Mix thoroughly.
• Add the boiled pasta and gently toss until everything is well-coated.
• Finally, add chopped coriander and mix again.
• Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
• Before serving, take the salad out of the fridge, uncover, and give everything a good toss. Add the reserved 2 tablespoons of dressing for an extra creamy finish.
• Serve and enjoy this refreshing, delicious pasta salad.
