Boondi ladoo is one of the traditional indian sweet made for special occasions like diwali . It is made with gram flour/ besan flour and sugar. This ladoo/ ladu is simple and easy to make and can be done within 35 to 40 mins. I have tried many varieties of ladoo such as moong dal / paasi parupu ladoo, Ragi ladoo, Carrot ladoo, Rava ladoo and among these boondi ladoo is my favorite one.

➡️INGREDIENTS:
Gram flour/Besan flour 1 1/2 cups
Salt a pinch
Turmeric powder 1/4 tsp
Water 3/4 + 1/2 cup
Cloves 2
Cardamom powder 1/4 tsp
Oil as required
Sugar 1 cup
Ghee 2 tsp
Sugar candy few
Fried cashews few
Fried raisins few

➡️METHODS:
1. Take 1 and half cups of besan flour sieve it in a mixing bowl.
2. Add a pinch of salt and some turmeric powder to the besan flour .
3. Now add 3/4 cup of water little by little to make a smooth batter as shown. It should not be thick nor thin.
4. Heat some oil in a pan for frying boondi.
5. Take the boondi ladle/ boondi jhara, place it above the oil. Now pour and spread the batter .
6. The boondis we get should be crispy not over cooked. Take the boondis out before it turns brown colour.
7. Repeat the same for rest of the batter.
8. Transfer the boondis to mixie jar, add the cloves along with it and pulse it for few seconds.
9. For preparation of sugar syrup, add a cup of sugar and water in a pan. Boil it to make a one string consistency.
10. Next add 2 tsps of ghee ,give a mix and switch off the flame.
11. Now pour the sugar syrup little by little into the boondi and mix it well.
12. The boondi will absorb all the syrup, now close and wait for 5 mins.
13. Then add sugar candies, fried cashews, fried raisins and mix everything well.
14. When the heat is bearable make balls out of the boondi mixture.
15. Our boondi ladoos a ready now. Store it in an airtight container. It will stay good more than a week.
