RECIPES
Breakfast: Blueberry Smoothie Bowl
Serves 2
For the smoothie bowl
• 1 cup frozen blueberries
• 2 frozen bananas (peeled and chopped)
• 1 cup soya milk
• squeeze of agave syrup
For the toppings
• handful of fresh blueberries
• toasted coconut flakes
• some hazelnuts, chopped
• sprinkle of ground flaxseed
• spoonful of peanut butter

Lunch: Spicy Chickpea Bowl
Serves 4
For the chickpeas
• 1 can chickpeas
• 1 tbsp olive oil
• 1/2 tsp smoked paprika
• 1/2 tsp cumin
• 1/2 tsp garlic granules
• salt & pepper to taste
For the cashew dressing
• 60g cashews
• 2 tbsp nutritional yeast
• 1 tsp of white wine vinegar
• 2 garlic cloves, diced
• salt & pepper to taste
• 100ml water
For the salad
• 1/2 a cucumber, diced
• 1 head of romaine lettuce, shredded
• small bunch of mint, finely chopped
• small bunch of coriander or parsley, finely chopped
• 12 cherry tomatoes, halved
• 2 avocados, chopped into chunks
• 1 pouch of pre-cooked quinoa

Dinner: Shredded Tofu Tacos
Serves 2
For the shredded tofu
• 1/2 a block of tofu
• 2 tbsp cornflour
• glug of cooking oil
• 1/2 red onion, diced
• 1 garlic clove, minced
• 2 tbsp tomato ketchup
• 1 tbsp of tomato puree
• 1 tbsp soy sauce
• 1/2 tbsp brown sugar
• 1tsp smoked paprika
• 1/2 tsp of cumin
• 1/2 tsp dried oregano
• 1/2 lime, juiced
• big pinch of salt & pepper
For the garlic and chive mayo
• 3 tbsp vegan mayo
• 1 tbsp dairy-free milk
• 1 tsp garlic granules
• fresh chives, chopped
• pinch of salt & pepper to taste
For the red cabbage slaw
• 50g red cabbage, finely sliced
• 50g grated carrot
• 2 spring onions, sliced diagonally
• 1/2 lime, juiced
• 1 tsp agave syrup
• pinch of salt & pepper
For the rest of the tacos
• 4 corn tortillas
• pickled jalapeños
• fresh coriander
• lime wedges
