3 River’s Homestead hosts the #EVERYBIT COUNTS CHALLENGE every August, where you are challenged to preserve something every day in the month of August, no matter how small it maybe. The idea is a lot of little projects will end up amounting to a lot of food on the pantry shelf come winter. In today’s video I am sharing us doing a week's worth of preservation projects. Join us as we make pickled green beans, freezing herbs in oil, lacto-fermented sauerkraut (latin american curido style), dehydrated zucchini and squash flour, canning no sugar strawberry jam using Pomona’s Universal Pectin, and getting our cured garlic ready for long term storage! PICKLED GREEN BEANS
Yield: 1 quart jar
blanched green beans
2 cups 5% White Distilled Vinegar
2 cups water
4 tsp salt
1 tsp sugar
optional seasonings (dill sprigs, garlic cloves, onions, mustard seeds, black peppercorns, etc.)

SAUERKRAUT (LATIN AMERICAN CURTIDO STYLE)
Yield: 1 Half Gallon Mason Jar
2-3 small to medium sized cabbages
1 large onion
1 cup of grated carrots
1 TBLS oregano flakes
1/2 tsp cayenne pepper fakes (optional)

DEHYDRATED ZUCCHINI SQUASH POWDER
shred and dehydrate at 135 degrees for approximately 8 hours

CANNING NO SUGAR STRAWBERRY/RASPBERRY JAM WITH POMONA'S PECTIN
Yield: 6-7 8 oz jars
8 cups of strawberry/raspberry puree
2 cups of honey
4 tsp calcium water
4 tsp Pomona's Pectin
