Recipe: Green Chile Chilaquiles Chopped Cheese Sandwich

Ingredients:
1 tablespoon vegetable oil
1 small onion, diced
4 ounces mushrooms, sliced
8 ounces ground beef
1 tablespoon Lawry's seasoning salt
1 cup green chile sauce (salsa verde)
2 cups tortilla chips, lightly crushed
4 slices Velveeta cheese
2 hoagie rolls
Lettuce, shredded
Tomato, sliced
Japanese mayo, to taste

Instructions:

1. Heat a flat-top griddle or a large skillet over medium heat. Add the vegetable oil and allow it to heat up.

2. Add the diced onion and sliced mushrooms to the griddle. Sauté them until they become tender and slightly browned.

3. Push the onions and mushrooms to one side of the griddle, creating space for the ground beef. Add the ground beef to the empty space and break it up using a spatula.

4. Season the ground beef with Lawry's seasoning salt. Continue cooking the beef, stirring occasionally, until it's browned and cooked through.

5. Once the beef is cooked, mix it with the onions and mushrooms on the griddle.

6. Pour the green chile sauce over the beef, onions, and mushrooms. Stir everything together to ensure the sauce is evenly distributed.

7. Add the crushed tortilla chips to the griddle and mix them with the beef mixture. Allow the tortilla chips to soak up some of the sauce and become slightly softened.

8. Divide the mixture into two portions and shape them into rectangles roughly the size of your hoagie rolls.

9. Place two slices of Velveeta cheese on top of each portion of the beef mixture, allowing the cheese to melt and bind the ingredients together.

10. While the cheese is melting, slice the hoagie rolls in half lengthwise and lightly toast them on the griddle until they become golden brown.

11. Once the cheese has melted, carefully transfer each portion of the beef mixture with the melted cheese onto one half of each toasted hoagie roll.

12. Top the beef mixture with shredded lettuce and sliced tomatoes.

13. Drizzle Japanese mayo over the lettuce and tomatoes to taste.

14. Place the other half of the hoagie roll on top of the sandwich to complete it.

15. Serve the Green Chile Chilaquiles Chopped Cheese Sandwich immediately and enjoy!

Note: Feel free to adjust the amount of green chile sauce and Japanese mayo according to your taste preferences. You can also add other toppings such as avocado or pickled jalapeños if desired.
