材料(2碗份量):
100g乾米粉,先浸軟,再在滾水煑1分鐘,隔去水份,分放兩碗中
375g豬肉切片
200g芽菜,如要熟芽菜,用微波爐熱1分鐘
200g蘿蔔絲(紅和白的)
20g九層塔葉切絲
1湯匙香茅碎
做法:
1.大火熱鑊下兩湯匙油
2.爆香一湯匙蒜蓉和一湯匙薑蓉
3.下肉片炒香約一分鐘
4.加入調味:一湯匙紹興酒,一湯匙生抽,一湯匙蠔油,一茶匙老抽和兩茶匙糖,炒勻約兩分半鐘
5.加入一湯匙香茅碎,炒多一分鐘便好了
6.將芽菜、蘿蔔絲、肉片和香葉放在兩碗中
7.用一湯匙油炒香20 gram青蔥粒成蔥油
8.將蔥油放在肉片上
9.用一份蜜糖,兩份滾水,一份魚露和一份檸檬汁,攪勻,加上檸檬片、青檸片和小米椒圈,便是越式魚露了
10.吃時將碗中材料拌勻,淋上越式魚露便是
Recipe:
Ingredients(2 bowls):
100g dry vermicelli, soak in water till soft, cook in boiling water for 1 min, drain the water, put in 2 bowls
375g pork slices
200g bean sprouts, heat in microwave for 1 min if u prefer cooked
200g daikon n carrot fine strips
20g sliced Thai basil leaves
1 tbs grated lemongrass
Cooking:
1.set wok at high heat with 2 tbs oil
2. When oil hot, saute 1tbs minced garlic n 1tbs minced ginger
3. Add pork slices, fry for a minute
4. Add seasonings:1tbs shaoxing wine, 1 tbs soy sauce, 1 tbs oyster sauce, 1 tsp dark soy sauce n 2 tsp sugar. Stir fry for about 2.5 min
5. Add 1tbs grated lemongrass, fry for another minute
6. Put bean sprouts, carrot n daikon, pork slices n Thai basil on the noodle bowls
7. Make green onion oil by frying 1tbs oil with 20g sliced green onion
8. Pour the onion oil on the pork slices
9. Prepare the salad dressing by mixing 1part of honey, 2 parts of hot water, 1 part of fish sauce n 1part of lemon juice
10. Mix the ingredients n add salad dressing for a colourful noodle salad bowl.
