The wild boar’s hide was cleaned of hair by scraping with a knife and scorching over fire, then cut into pieces. Each piece was salted and rubbed with chili. Charcoal was made from great logs. Meat and bones were laid on a bamboo rack, raised about two feet above the ground. Fresh banana leaves covered the top, trapping heat and smoke, and keeping away greedy flies. Every few hours, the meat was turned—inside to outside, top to bottom—so it cooked evenly and absorbed the smoke...
