However, in this ‘vegan pelau’ version, we swop out the meat and replace it with the hearty, rich flavors of mushrooms, pigeon peas, and vibrant seasonings to create an equally delicious meal.

INGREDIENTS
• 2 tbsp brown sugar
• 2 tbsp ketchup
• 8 oz king oyster mushrooms, chopped (about 2 cups)
• 1 can (2 cups) dried pigeon peas, rinsed and drained
• 2 cups parboiled rice, rinsed
• 1 carrot, cubed
• 1 red bell pepper, cubed
• 1 cup cubed pumpkin
• ½ cup chopped celery
• ½ cup chopped onion
• ½ cup green seasoning (blend of fresh herbs like thyme, cilantro, scallions, garlic)
• 1 tbsp salt
• 1 can coconut milk
• 2 ½ cups water
