Salsa Verde Crockpot Chicken
• 1 ½ lbs. boneless skinless chicken thighs
• 2 cups jarred salsa verde
• 1 4-ounce can mild diced green chiles
• 8 garlic cloves, minced
• 1 jalapeno, seeded and diced
• 1 tsp garlic powder
• 1 tsp dried minced onion
• 1 tsp ground cumin
• 3 green onions, sliced (added on day of cooking)
• ½ cup chopped cilantro (added on day of cooking)
• 1 lime, juiced (added on day of cooking)
• Tortillas, shredded cheese, lettuce, chopped tomatoes, etc. (for serving)
Cook on high for 4 hours or low for 6-8 hours.

Hummus (blend together)
2 cans chickpeas, boiled for 25 mins with 1tsp baking soda then peeled
4 garlic cloves
2 lemons, juiced
1 tsp salt
1/4 tsp cumin
1/2 cup tahini
2 tbsp olive oil

PB Banana Smoothie (blend together)
2 small bananas or 1 large
1 cup ice
1 c. unsweetened almond milk
2 Tbsp. peanut butter
2 tsp. honey
1/8 tsp. pure vanilla extract
1/8 tsp. ground cinnamon
