Mexican Tuna Salad with potatoes
I might confess that living in Chicago has brought me closer to olives and bannana peppers I combined a little of my Chicago with my classic Mexican ensalada de atun con papas and turned out delicious. You can make it and avoid the olives and chiles guero but this really brings the salad to another leves. I usually do not add salt to the canned tuna as it is already pretty salty.

You can add mayo to taste o substitute half od the mayo for greek yogurt for creamy texture without the calories.

This recipe makes enought for 5 adults

3 Tunna cans @chickenoftheseaofficial
1 cup peas and carrots
2 cups cubed potatoes
3/4 cup red onion chipped
3 spoons mayo
1/2 teaspoon mustard
1/4 cup chopped jalapeno
1/2 cup prickled jalapeno juice
1/4 teaspoon pepper
3/4 cup olives
a few banana peppers
