Version #2 Sandwich

INGREDIENTS

1/2 cup (112g) vegan mayo
2 tablespoons gochujang
A few squeezes of lime juice
Sandwich fixings of choice: such as sliced Persian cucumbers, carrot ribbons, avocado, crisp lettuce leaves, and cilantro leaves
4 ciabatta rolls
Vegan butter, for toasting rolls (optional)

INSTRUCTIONS

1. Prepare the battered and pan-fried tofu as listed in the recipe (https://rainbowplantlife.com/tofu-san....
2. Make the Gochujang Mayo: In a bowl, stir together the mayo, gochujang, and a few squeezes of lime juice. Taste, adding more lime juice as desired. If too spicy, add more mayo. If not spicy enough, add more gochujang.
3. Spread the rolls with a bit of butter and toast in a frying pan over medium or medium-low heat until golden brown.
4. Sprinkle your sandwich fixings with a pinch or two of salt and pepper.
5. Assemble: Schmear a generous layer of gochujang mayo on both slices of the toasted bread, then top with the crispy tofu and sandwich fixings.
