Today we make the Monkeypod Mai Tai and make the best version of the Honey Lilikoi Foam that will allow this foam to live on in your glass for hours and hours... Not that you really need it to but a few more minutes is nice. This Mai Tai was created by Jason Vendrell and Chandra Lam and has been on the menu at the Monkeypod Kitchens when it opened in 2011. You'll also find this drink served at the other Peter Merriman locations across Hawaii.

Honey Lilikoi Foam
1 ½ oz honey syrup (2 parts honey to 1 part water)
2 oz lilikoi/passion fruit puree (60 ml)
2 oz simple syrup (1:1 simple) (60 ml)
2 oz egg whites (60 ml)
2 ½ oz cold water (75 ml)
3 grams of Foam Magic
***if using honey instead of honey syrup, use 1 oz honey and 3 oz of cold water

Monkeypod Mai Tai
¾ oz lime juice (22.5 ml)
½ oz orange curacao (15 ml)
½ oz macadamia nut orgeat (15 ml)    • This Mr. Bali Hai Is Just Better  
1 oz light rum (30 ml)
1 oz dark rum float (30 ml)
Top with Honey Lilikoi Foam
