Alle Belle: These Jaggery-And-Coconut stuffed pancakes (or crepes) have been a favorite tea-time snack for many Goans. The pancake batter is super quick to prepare and even the cooking time is short. I have memories of my kids stuffing their own pancakes with the 'choon' (the coconut and jaggery filling) when young to growing up and trying their own hand at attempting to create the roundest crepes! Meals and moments can tell a story, if we only choose to listen :)

Ingredients:
1 Cup Maida (All-purpose Flour), sifted
Salt to taste
1 Whole Egg
1/2 teaspoon Vanilla Essence
1 & 1/4 Cups Water, adjustable
Vanaspati/Ghee for frying

For the filling (called 'Choon' in Konkani):
1 Cup fresh, grated Coconut
1/4 Cup Cane Jaggery
1/4 Cup Palm Jaggery

Tips:
-Ensure that the batter is lumps-free. Sifting the flour helps. Prepare a thin batter by adjusting the water as needed.
-Keep the flame on Medium-Low. Grease the pan with some Ghee/Vanaspati.
-Stir the batter each time before ladling.
-Control the flow of the batter by swirling the pan. It may take a few tries to get it right.
-If the batter doesn't seem to flow easily, add a little more Water.
