Mexican Chicken n Dumplings Casserole
1 rotisserie chicken deboned
1 pack flour tortillas
2 cans diced green chilis
1/3 cup sour cream
4 oz velvetta cheese
1 cup of chicken broth
2 tbsp butter
1 small onion chopped
1 can golden mushroom soup (may substitute cream of mushroom soup)
Fajita seasoning (optional)
1 bag shredded cheese

Sautee onions in butter. Add chilis to pot and let simmer a few minutes. Add chicken broth, sour cream, velvetta and mushroom soup. Simmer til combined and velvetta is melted. Remove from heat and add deboned chicken. In a large baking dish put a splash of chicken broth or water, just enough for a very thin coat on the bottom. Next tear tortillas into pieces. I usually tear them in to 4ths. Put one layer of tortillas on top of broth. Next spoon a thin layer of the cheese sauce over the tortillas. Continue with another layer of tortillas and then another layer of cheese sauce. Continue until you have used all sauce. Cover with foil and bake at 350 degrees for 45 minutes. Remove foil and cover top of casserole with shredded cheese. Bake for another 10 minutes at 350 degrees.
