Pineapple Sheera

Ingredients -
Semolina (rawa)- 1 cup
Ghee - 3/4 cup
Cashews - 5-10 (cut into halves)
Raisins - 2 tbsp
Pineapple (chopped) - 1 cup
Pineapple purée - 1/4 cup
Sugar - 1 cup
Water - 3 cups
Saffron - 10-12 strands

Method :-
In a deep pan add ghee, saute the cashew & raisins. Remove & keep aside.
In the same pan, add a little more ghee & saute the sooji till golden brown & keep aside.
In a kadhai, add 2 tbsp ghee, add chopped pineapple & the purée & saute for a few minutes till golden.
Add 1/2 cup sugar, give it a mix & cook for a while.
Once done, add 2.5 cups of water, cover & boil till the pineapple softens.
Add saffron strands and give a stir.
It will release colour and flavour.
Then gradually add the sooji while stirring continuously. (Be careful as there would be a lot of bubbles)
Also add 3/4 cup of sugar & a few drops of yellow color (or saffron threads) & mix well.
Add  remaining ghee, cover & simmer for 5 mins.
Add the fried nuts & give everything a good mix.
Serve hot or even at room temperature.
