Full written recipe - Instant Sweet Corn Dhokla

Prep time: 5-10 minutes
Cooking time: 30-35 minutes
Serves: 5-6 people

Ingredients:
Dhokla
UPMA RAVA | उपमा रवा 1 CUP
SOUR CURD | खट्टा दही 1/2 CUP
WATER | पानी 3/4 CUP
SUGAR | चीनी 1/2 TSP (OPTIONAL)
SALT | नमक TO TASTE
SWEET CORN | स्वीट कॉर्न 1.5 CUPS
GINGER | अदरक 2 INCH
GREEN CHILLI | हरी मिर्च 3 NOS.
SWEET CORN | स्वीट कॉर्न 1/3 CUP
TURMERIC POWDER | हल्दी पाउडर 1/2 TSP
RED CHILLI FLAKES | रेड चिली फ्लेक्स 1/2 TSP
OREGANO | ऑरेगैनो 1/2 TSP
GROUNDNUT OIL | मूंगफली का तेल 1 TBSP
ENO | ईनो 1 TSP
WATER | पानी 1 TSP
BLACK PEPPER POWDER | काली मिर्च पाउडर AS REQUIRED
Tempering
GROUNDNUT OIL | मूंगफली का तेल 2–3 TBSP
MUSTARD SEEDS | राई 2 TSP
GREEN CHILLI | हरी मिर्च 4 NOS. (SLICED)
ASAFOETIDA | हींग 1/2 TSP
CURRY LEAVES | कड़ी पत्ते 15–20 NOS.
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
Method:
To make the base batter, add rawa, sour curd, water, sugar & salt in a large bowl, whisk well then cover & let it rest fro 10-15 minutes. Until then you can make the sweet corn paste & also the green chutney. You can also set the steamer after that & grease the dhokla trays with some oil.
Add the sweet corn into a mixer jar along with green chilli & ginger & grind it into a paste.
Once the batter has rest, it will thicken up as the rawa absorbs water, add the prepared sweet corn paste along with some more sweet corn, turmeric, red chilli flakes, oregano & oil, mix well.
Once the steamer is ready & you've greased the dhokla trays, add eno into the batter along with a splash of water & mix really well, then pour the batter into the trays equally, tap them gently & add a pinch of red chilli flakes, oregano & black pepper from the top.
Place the trays into the steamer & steam over high flame for 20 minutes.
Once the dhoklas are cooked, you can check by inserting a knife, it should come out clean. Remove the trays from the steamer & let them cool down slightly, do not cut the dhoklas while they are still steaming hot.
Cut the dhokla into pieces as required, then make the tempering.
Set a tadka pan over high heat, add oil & let it get hot.
Then add the mustard seeds, green chillies & asafoetida, stir well & cook briefly, lastly add the curry leaves & pour the tempering over the dhokla equally, garnish with some fresh coriander.
Your delicious & instant Sweet Corn Dhokla is ready.


Special Green Chutney
Ingredients:
FRESH CORIANDER | हरा धनिया 1 SMALL BUNCH
MINT | पुदीना A HANDFUL
GINGER | अदरक 1 INCH
GREEN CHILLI | हरी मिर्च 2 NOS.
CUMIN SEEDS | जीरा 1/2 TSP
SUGAR | शक्कर 1 TBSP
GATHIYA | गाठिया 2–3 TBSP
LEMON JUICE | नींबू का रस OF A LEMON
ICE CUBE | बर्फ 1–2 NOS.
WATER | पानी A SPLASH
SALT | नमक TO TASTE
Method:
For the chutney, add all the ingredients into a mixer jar & blend it into a fine thick chutney.
